These include Besobela (Ethiopian sacred basil), Koseret, fenugreek, cumin, coriander, turmeric, Ethiopian cardamom (korarima), cinnamon, or nutmeg. While the butter is in the fridge, let’s prepare the spices.
Except for the turmeric and the fenugreek powder, make sure all the ingredients are dry. If they are not, put them on a pan that is not very hot and roast them a little bit just enough to make them dry. In Amharic, this action is called Mames (ማመስ). Once you make sure they are dry, mix and grind all of them, again except the turmeric. Once you do that, put the mixture in an airtight container.
Once it’s cold, which takes 30 to 45 minutes, the butter should be on top and the water and impurities be at the bottom. Now you can either transfer your butter into another pot by slowly scooping it from the top, or you can slowly strain the water and impurities into your sink by slowly and carefully inclining the pot.

Note:The Ethiopian clarified butter can have one of two different colors, Golden or White, depending on the addition of turmeric in this step. Turmeric is used just for looks and you can just ignore it if you prefer. You can also ignore or add the fenugreek powder, it adds a unique taste that many people like.
Depending on the intended use of the clarified butter, the type of pure butter used can vary: For example, if the niter kibbeh is to be used for Kitfo, Genfo, Kinche, Bula Genfo, Chiko, Chechebsa, and the like, or if it is to be mixed with different condiments, fresh unsalted butter (ለጋ ቅቤ) is used. For stews, like doro wot, Key wot and so on, the fresh butter is mixed with one spoon roasted fenugreek powder and stored sealed for five to seven days.
